    SV pork belly for 7 hours at 80c and the pork was amazing and tender.

    Kinda fucked up the skin wasn't able to get appropriate crunch. I think because I wasn't able to score it properly (all knifes are shit as fuck).

    Think next time I'll use a Stanley knife to score and also will shallow fry the skin as I've had amazing results with that in the past (not SV though). Will also go 24hrs at like 61 so should be super tender.

    Made a soy honey sriachi hoisin sauce which was pretty good but could've cooked longer to thinken up more.

    Had the exact same problem today, I scored my pork belly too deeply and the skin didn’t crisp up well.

    My dry rub was 10/10 tho

    Decided to stay in tonight and am cooking beef Wellington, truffle mashed potato (using truffle oil rather than butter), cauliflower cheese, some kinda green idk and creme brulee for dessert. Picked up a decent bottle of French wine (syrah from Northern rhone)

    Just put the crem brulee in the fridge they look fkn good.

    Will deliver pics later.

    Made beef short ribs on the first run. Had trouble with it getting too hot I think because it was 41 here today and in full sunlight. Came out a bit dry because of that but not too bad.

    I love my lamb shanks. My favourite form of meat. Legit. The best lamb shank I've ever had is the Woolworths flavored ones in the cardboard box. Think it's too do with how they bag it or something. It's always so tender and flavourful

    The shit woollies put it those bags are meat that's almost expired. They then smack in some marinade with a tonne of preservatives and wallah you got yourself a 1000% mark up on some expired meat.

    I do like shanks tho
